About a month ago I'd seen these letters in my spring Pottery Barn catalog.
Cute...
but not $79 cute.
Roll forward 3 weeks...
A very creative and talented friend of mine made this wreath with moss.
Suddenly I remembered the letters I'd seen and I was inspired.

So...
$3.99 for the wooden letter
$4.99 for the moss (don't even get me started on the stink)
some hot glue
random ribbon and flowers I had laying around...
voila!



Not bad for a spring door hanging...
it'll definitely do in pinch.

Books = Must Haves

I love collecting hardcovers...
none of that Kindle nonsense...
I want a library stacked to the roof one day.


These books will definitely be joining that goal.

J.Crew and Crystal Renn


I loved opening up my J.Crew catalog and finding Crystal Renn modeling the swimwear.
Made me happy.


I admire her message and that she refuses to conform to any kind of label
whether it be bone thin, plus-size, or the new medium-size she's currently being categorized as.
Good job J.Crew... I think the ads are perfection.

Homemade Oreos.


Oreo Cookies


Cookies
2 Devil's Food Cake Mix (Chocolate with pudding in the mix)
I use Betty Crocker
4 Large Eggs
1 C. Vegetable Oil

First crack eggs in the mixer and start beating... add oil... then slowly add cake mixes.
Mix all together for about a minute.
Roll batter into balls (I use a 1 1/2 inch ice cream scoop to measure)
Bake at 350 for 8-9 min. (I do 8 min.)

Icing
1 8oz. Cream Cheese
2 1/4 C. Icing Sugar
2 tbsp. Butter (softened)
2 tsp. Pure Vanilla Extract

We quite like these cookies around these parts...
I made some yesterday for a lady in our ward who just had a baby boy (hence the blue icing),
but they are such an easy choice for any kind of occasion...
Christmas time I add crushed candy canes to the icing
In the Fall I did a vanilla cookie with orange icing
... lots of options.

One warning...
I've yet to witness a child eating these without an all around gooey mess to follow.

Our Go-To



I've been trying to find the perfect pomodoro sauce...
and it hasn't been easy...

I've tried all kinds of recipes and techniques.

I would say for time, taste and effort... this recipe is my winner (so far).
The kids love it, the husband loves it and it's really quite easy.
I probably make this at least once a week.

It's so yummers and super healthy.

Here you have it...

I take a shallow casserole dish and spray it with cooking spray...

Set oven to broil

1 28oz Can of Stewed tomatoes
- I dice them in half above the can and drain out the juice and seeds (some seeds will evade you).
About five medium garlic cloves - crushed
Olive Oil
- I just pour it all around... if I had to guess... I'd say it's about 1/4 cup... I think... maybe? If the sauce seems dry while it's roasting, just add more...
Truffle Oil (if you don't have it... skip it)
- Maybe 2 tbsp.
Fresh Ground Pepper and Salt.
Sugar - I'd say about a tsp.
Tomato Paste
- 4 - 5 tbsp.

Broil away...
I don't time it, but you want all the tops of the tomatoes to be good and browned.
Maybe 15 min.?
Honestly just watch it... cause I really have no idea...
Once it's browning really nice,
I toss a handful of chopped fresh basil on top and give it a good stir.
Let it broil for another 3-5 min.
Once I've taken it out of the oven, I take a potato masher and mash down all the tomatoes...
if it seems a little dry add more oil.
Taste and add desired amount of salt/pepper.

I will often use 2 cans of tomatoes and adjust everything else to make a little more.

I like to put this with whole wheat thin spaghetti...
if you pick a good brand you won't even miss your old white pasta.
I often serve this with a pine-nut chicken recipe that I'll post sometime soon.

I know I'm T-errible at writing out recipes...
I'm trying to be better at paying attention to what I do.
